People who know baking swear by using a Silpat baking sheet (mat). Basically this is a silicone baking sheet as opposed to the normal aluminum one we are all used to. The sheet can completely replace any recipe that calls for parchment paper since it is made of a mix of fibreglass and non-stick silicone. Don’t worry, this guy is designed to not melt. You can actually heat these up to 482 degrees F. For those of you not in the US, that is 250 degrees. What is the deal with the Imperial system anyway? But I digress.
